BIOPROSPECTING OF AUTOCHTONAL LATTIC BACTERIA FOR APPLICATION IN FOOD PRODUCTION AND IN THE PHARMACEUTICAL AREA

Abstract

Bioprospecting of autochthonous microorganisms from Oeste region's fruits made in Santa Catarina region , aimed to analyze in the fermented apple pulp, lactic acid bacteria for the development of products for the food area. After the spontaneous fermentation of the apple pulp with the pilsen beer must, the fermentation was isolated at different concentrations and types of broth. Soon after the growth analysis and it was found the presence of numerous 

lactic acid bacteria, mainly gram positive bacilli, and being in the presence and isolation of different concentrations of salt and pH, they reacted positively because they grew at concentrations of pH 2.0 4 .6 and 7.0, with growth at temperatures 28 ºC and 37 ºC, and tolerance and growth at 0.5% salt concentrations.
